ISO 22000:2005 – Food Safety Management System – Internal Auditor Course

Who is this course aimed at?

This 2 day course is designed for those who will be required to carry out internal food safety audits and those who will be required to plan and manage the food safety internal audit schedule.

Do you need previous experience or qualifications to attend this course?

Delegates attending this course may benefit from the Introduction to ISO 2200:2005 Food Safety Management Systems course, prior to attending the Internal Auditor course, to benefit from a better understanding of ISO 22000:2005 standard and requirements.

Course Content

This course will enable delegates to plan, conduct and report internal food safety audits. The organisation will benefit from having confidence in the Food Safety Management System by performing internal audits and is mandatory requirement of the ISO 22000:2005 standard.  

Objectives

This course will provide a background to ISO 22000:2005 Food Safety Management System requirements and will explain the key role of the Internal Food Safety Auditor. Delegates will learn about HACCP and prerequisite programs and how they fit into the ISO 22000:2005 standards.   Delegates will be taken through the audit process, using auditing techniques and illustrate issues that may arise through non-conformances found within the auditing process and will include;   •      An introduction to ISO 22000:2005 •      The UKAS Accredited Certification Process •      Recognise and relate Food Safety Legislation to manufacturing practices •      Briefly explain what is HACCP •      List some Prerequisite Programmes (PRP’s) •      Relate HACCP and PRP’s to ISO 22,000 standard •      Differentiate between 1st, 2nd, & 3rd Party auditing •      Relate internal audits to food safety requirements •      Prepare an internal audit schedule; recognising importance and risk of food safety production •      Explain the key role of an Internal Food Safety Auditor •      Plan an internal audit •      Conduct an internal audit. •      Carry out effective food safety audit techniques. •      Write an effective internal food safety audit report. •      Describe the corrective action cycle •      Explain how the internal audits contribute to food safety

Assessment

Delegates will be continually assessed throughout the course, including a practical auditing exercise.
